Dopo aver parlato del lavoro del giardiniere, passiamo a una professione capace di rendere felici milioni di persone grazie ai prodotti che porta sulle nostre tavole.

Nella società odierna, una delle figure più ricercate nell’ambito della ristorazione sia in Italia che nel resto del mondo è quella del pizzaiolo.

Quello del pizzaiolo è un lavoro che ha alle spalle passione, capacità, energia e sacrifici ma che è, a sua volta, frutto anche di tanta soddisfazione e dunque non si limita alla sola preparazione della pizza.

Per di più, questo lavoro è anche una tradizione che si tramanda di generazione in generazione e ricordiamoci che la pizza è uno dei cibi che ha reso famosa la cucina italiana in tutto il mondo.

Molti si domanderanno quali siano i requisiti essenziali per poter svolgere tale attività in maniera professionale, quanto si potrebbe guadagnare e che cosa deve fare un bravo pizzaiolo per garantire qualità e bontà alla sua clientela.

A tale proposito nell’articolo seguente vi farò conoscere meglio tutto ciò che concerne i vari compiti che deve svolgere, il profitto economico e soprattutto i requisiti necessari per la professione di pizzaiolo.

1. Compiti principali del pizzaiolo

Come già citato nell’introduzione, il compito del pizzaiolo non riguarda solo la preparazione, lavorazione e cottura della pizza o focacce ma ci sono altri fattori importanti da tenere in considerazione come ad esempio:

1. Tenere pulito e igienizzato il banco di lavoro, secondo le norme igienico-sanitarie vigenti.

2. Controllo della qualità e della scadenza degli ingredienti da utilizzare.

3. Assicurarsi di non contaminare gli ingredienti destinati alla preparazione di pizze o focacce per soggetti affetti da intolleranze e allergie alimentari, a tal proposito sarebbe opportuno tenere un forno apposito.

4. Preparazione dell’impasto che deve assicurare una buona lievitazione.

5. Conoscere le variazioni di cottura in base alla tipologia di forno che può essere a gas, elettrico o a legna.

6. Deve curare il menù affinchè possa offrire una svariata scelta di pizze.

7. Organizzare bene la dispensa e il magazzino.

8. Curare bene la pulizia e la manutenzione del forno.

Bisogna sottolineare che la figura del pizzaiolo richiede anche il sapersi rapportare con la clientela, intrattenerla e rendersi disponibile ad ogni tipo di richiesta che riguardi i gusti personali del cliente.

Terminata la sezione delle mansioni passiamo quindi all’aspetto economico di questa professione.

2. Guadagno di un pizzaiolo

Purtroppo non va dimenticato che la grande concorrenza sul territorio per la figura del pizzaiolo comporta due aspetti negativi.

Infatti, fa si che molti si trasferiscano all’estero dove è presente una minore concorrenza, sia per lavorare come dipendente sia per aprire una propria attività e, inoltre, influisce in modo negativo sui prezzi di mercato che non danno il giusto valore all’attività.

Ma veniamo al dunque.

Un aiuto pizzaiolo guadagna circa 500 euro al mese, che poi, acquisendo esperienza, passano a 900 euro circa; tale prezzo però, può variare visto che viene stabilito dal proprio datore di lavoro e che quindi tende a variare in base alla posizione geografica e ad altri fattori.

Diverso è invece il discorso per un pizzaiolo professionista, infatti, esso può arrivare a guadagnare somme considerevoli di circa 4000 euro al mese.

Tali dati possono variare dalla tipologia del locale e dalla sua posizione; sappiamo bene che una semplice pizzeria di paese offrirà prezzi più bassi rispetto a una pizzeria di livello o di una pizzeria sita in una zona turistica.

Detto ciò, a tutti coloro che possono essere interessati a questo tipo di professione consiglio vivamente di leggere il prossimo paragrafo che spiega le strade utili per intraprendere questo lavoro.

3. Cosa serve per fare il pizzaiolo

I requisiti per svolgere la figura di pizzaiolo sono svariati, e qui citeremo quelli fondamentali.

In primo luogo sarebbe utile ai fini di garantire la massima professionalità essere in possesso dell’attestato alberghiero o, in mancanza di esso, dell’attestato di un corso di formazione professionale, per conoscere bene e in modo dettagliato le varie fasi che riguardano la preparazione, lavorazione dell’impasto, utilizzo degli ingredienti fino ad arrivare alla cottura, oltre che la conoscenza delle diverse tipologie di farina e la loro lavorazione.

Potrà essere necessario per essere assunti presentare un curriculum con referenze dimostrabili.

Inoltre, è importante considerare e non sottovalutare che il lavoro di pizzaiolo richiede la capacità di reggere orari di lavoro intensi, rimanendo in piedi molte ore al giorno, sopportando lo stress dei ritmi frenetici che richiede l’attività, tenendo conto che si è sotto gli occhi della clientela, dato che, spesso, il bancone di lavoro si trova alla vista del cliente.

Spesso è anche richiesta la disponibilità, per chi lavora come dipendente, a turni di lavoro di tipo full-time, part-time o stagionali.

In quest’ultimo caso il lavoro si svolgerà in determinate stagioni dell’anno.

Infine, allo scopo di offrire agio a ogni tipo di clientela sarebbe utile, soprattutto per chi lavora in villaggi turistici o zone con presenza di stranieri la conoscenza di lingue, soprattutto dell’inglese, assicurando a tutti in questo modo la possibilità di esprimersi senza alcuna difficoltà.

Tutto questo ci fa riflettere sulla vera importanza di questa figura lavorativa.

Dietro a una buona pizza c’è tanto lavoro, esperienza, conoscenza, sacrificio, ma soprattutto tanta passione e questo è da tenere bene in considerazione se si decide di intraprendere tale attività.
