Oggi andremo a vedere uno dei lavori più antichi ancora in circolazione e che, nonostante l’età avanzata, rimane comunque uno dei più importanti e fondamentali del panorama italiano e non solo, stiamo parlando del panettiere, conosciuto anche con il nome di fornaio.
Il termine panettiere potrebbe, un attimo, far confondere in quanto qualcuno potrebbe pensare che questo professionista si occupa solo della preparazione del pane.
In realtà, il panettiere è un professionista a tutto tondo le cui specialità sono la preparazione del pane ma anche di focacce, pizze, biscotti, torte, croissants e molti altri prodotti tipici da forno.
Per poter esercitare questa professione, oltre a delle buone doti e capacità che possono essere imparate nel tempo, è importante sapere che è necessario possedere spirito di sacrificio visti gli orari alquanto scomodi di questo tipo di attività che porta il panettiere a lavorare la notte o la mattina presto.
Ma andiamo a scoprire nel dettaglio questa professione, cominciando proprio da quelle che sono le mansioni svolte da questo professionista.
1. Quali sono i compiti del panettiere
Nonostante molti potrebbero pensare che quello del panettiere sia un lavoro semplice, in realtà, dietro questa professione c’è quasi dell’arte.
Il compito fondamentale del panettiere è sicuramente quello di impastare e cuocere il pane ma, dietro si nascondono molte altre mansioni.
Il primo compito per questo professionista è la scelta delle materie prime, il prodotto finale infatti, dipenderà molto anche dalla giusta scelta delle materie utilizzate per il prodotto finale.
Una volta scelte le materie prime, si passa all’azione. Qui il panettiere si carica sulle spalle il peso dei vari sacchi di farina (che possono raggiungere pesi considerevoli) per posizionarla così sul banco di lavoro dove avverrà l’opera.
In seguito, il fornaio dovrà dosare le giuste quantità da adottare a seconda del tipo di prodotto da preparare con precisione quasi millimetrica.
Una volta impostate le quantità, si torna al lavoro di fatica tramite l’impastamento a cui seguono dei movimenti ben precisi e studiati.
Un altro degli aspetti fondamentali di questa professione è il saper preparare il forno, attrezzo chiave nella preparazione di ogni tipo di prodotto.
Il fornaio, infatti, deve saper impostare perfettamente il proprio forno, che sia esso a legna, elettrico o di qualunque altro tipo.
Una volta terminato di impastare, il compito successivo del panettiere sarà quello di inserire i diversi impasti all’interno del forno preriscaldato e, sopratutto, alla giusta temperatura.
Una volta messi in forno, questo professionista dovrà prestare attenzione ai tempi di cottura dei vari prodotti e, una volta pronti, li potrà tirare fuori.
Per alcuni tipi di panettieri il lavoro potrebbe finire qui, per altri invece (come ad esempio i proprietari di bottega) i compiti potrebbero proseguire con l’allestimento espositivo dei vari prodotti da vendere.
Insomma, i compiti di questo professionista sono davvero tanti e cambiano anche a seconda del fatto che si lavori all’interno della grande distribuzione oppure come dipendente nel proprio negozio.
A tutto questo è necessario aggiungere che i compiti svolti da questo professionista devono seguire dei criteri igienico-sanitari ben specifici e quindi, sarà sempre compito del fornaio la pulizia del locale, in particolare, della propria postazione di lavoro dove opera con le materie prime.
In generale, potremmo anche decidere di riassumere quelle che sono le mansioni più consone del panettiere in:
- Scelta delle materie prime
- Dosare le corrette quantità degli ingredienti al fine di una corretta preparazione dei prodotti
- Conferire forma all’impasto in figure che più preferisce
- Controllare la temperatura del forno prima e durante la cottura dei prodotti
- Cucinare i vari tipi di prodotti all’interno del proprio forno
- Impostare i tempi di cottura
- Tirare fuori i prodotti dal forno una volta pronti
- Organizzazione e gestione della postazione di vendita del pane e degli altri prodotti
- Curare la disposizione dei vari prodotti espositivi
- Rispettare le corrette norme igienico-sanitarie in vigore
- Riordinare e pulire i locali
- Gestione degli ingredienti e delle materie prime in magazzino in base alle esigenze
- Ordinare le merci mancanti dai fornitori
Ecco, in generale, questi sono i compiti che un panettiere è chiamato a svolgere. Naturalmente, in base a dove si lavora, qualche mansione potrebbe cambiare ma, in linea di massima, questi sono tutti i vari compiti per questo professionista.
Adesso che conosciamo meglio le sue mansioni, scopriamo se tutta la fatica di questo professionista è ben ricompensata.
2. Quanto guadagna il panettiere
In questa sede non esamineremo la remunerazione di un panettiere titolare d’impresa in quanto, questa, dipenderà dal giro d’affari che riuscirà a generare.
Andremo a vedere lo stipendio di un panettiere dipendente che varia a seconda che egli lavori per una piccola impresa artigianale o per una grossa industria.
Nel primo caso, lo stipendio andrà dai 1100 ai 1600 euro al mese, a seconda delle mansioni, dell’esperienza e dell’abilità del panettiere.
Nel secondo caso, nel mondo della grande distribuzione, lo stipendio avrà un piccolo rialzo partendo da un minimo di 1150 fino a 1750 euro mensili.
Nonostante la media si assesti comunque sui 1400 euro mensili, sappiate che è possibile arrivare abbastanza facilmente a cifre come 2000 o anche più euro (a seconda anche di dove si finisca a lavorare) data anche dalla difficoltà nel reperire questa figura professionale ben preparata, specie a causa dei sacrifici che questo lavoratore è spesso tenuto a fare, come ad esempio uno stravolgimento dei propri orari di vita.
Bene, ora che sappiamo che questa professione è in grado di raggiungere delle buone cifre, vediamo cosa occorre per diventare panettiere.
3. Come diventare panettiere
Iniziamo subito con una buona notizia, ossia che per fare il panettiere non occorre nessun titolo di studio.
Infatti, spesso la professione del panettiere viene tramandata in famiglia da padre a figlio e così via, tramandando competenze e conoscenze necessarie allo svolgimento dell’attività.
Tranquilli, non pensate che esista solo questa via, infatti, per tutti coloro che non avessero la fortuna di apprendere le conoscenze necessarie tramite le tradizioni familiari, esistono degli appositi corsi di specializzazione che permettono di apprendere tutto ciò che è necessario conoscere per intraprendere al meglio questa carriera.
Questi corsi possono essere organizzati sia da enti pubblici che da scuole private e vi permetteranno di apprendere non soltanto nozioni teoriche, bensì, anche molte conoscenze pratiche grazie all’apprendimento sul campo.
Questi corsi, una volta terminato il corso, vi rilasceranno il relativo attestato e, inoltre, molti di questi corsi rilasceranno anche l’attestato HACCP, fondamentale per operare in questo genere di professioni nonché essenziale nel caso voi vogliate, un giorno, aprirvi un vostro panificio.
Tenete presente che l’attestato da solo non basta a far di voi dei bravi panettieri. Questo è uno di quei lavori in cui esperienza e pratica la fanno da padrone, per cui, una volta terminato il corso vi servirà molta pratica per diventare fornai qualificati.
